Customer Rating:      Summary: Why does my smoke alarm keep going off? Comment: I just moved into a new apartment, and bought this for all my baking needs. It was great at first! Stuff really won't stick to this guy. It was a little difficult to get the brown spots that... some common ingredient in baked goods... causes off, but in general I was happy.
But every time I baked, even when nothing burned, my smoke detector would go off! At first, it was obvious to me that it was the electric oven; it was just too hot and I was used to gas.
But that didn't seem right. Everyone else can bake with an electric oven and keep the smoke alarm from going off! ...It must be the baking mat. Sure enough, it was. The next time I baked frozen Pilsbury cinnamon rolls (which sent the smoke detector into a high-pitched rage last time) with nothing but aluminum foil on my cookie sheet, everything was fine. Needless to say, I am disappointed.
Customer Rating:      Summary: Matfer Exopat Comment: The Matfer Exopat is great. Less expensive than some similar mats and it works great. Would buy again if needed. Hopefully I won't have too, unless I give it for gifts.
Customer Rating:      Summary: Not as nice as a Silpat. Comment: I have a Silpat and generally use it for making bread and other doughs. It really is a great nonstick working surface which helps me to use less flour. I don't use it for baking because I'm sensitive to many chemicals. I bought the Matfer for my daughter after reading reviews that claimed it was comparable to the Silpat (and was cheaper). The first thing I noticed was that it just didn't have the nice heft that the Silpat has, which I can just unroll and toss on the table and it lays immediately flat. This was thinner and curling a bit on the edges. Next, I noticed that it was dirty with some sort of greasy spots and the white edges were smudged. Could be cleaned off, but it does make you feel better for something intended as a cooking surface to arrive in clean condition. My daughter was moving and timewise a return didn't work out so we decided to test it out and see how it held up. It may turn out to be perfectly serviceable.
My recommendation would be that if you are very fond of your Silpat, as I am, stay with them. And maybe Matfer should take care that its products are sent out in clean condition.
Customer Rating:      Summary: Non stick is great, but I'll stick with parchment paper Comment: I used this mat to bake pig in a blanket. The bottom was still undercook whereas the top had turned brown. I used parchment paper and my bakery turned out perfect.
I will stick with parchment paper for my bakery and use this mat only for cooking meat.
