The R H Forschner by Victorinox Paring Knife features high carbon, stainless steel blade, hand finished at Victorinox in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade. Victorinox handles are ergonomically designed to minimize wrist tension. They provide a natural fit. A good heft and comfortable, positive grip are indications of a well-made knife. Although cutlery steel is naturally sanitary, materials and construction details of the handle minimize crevices what would offer hospitality to bacteria.

Customer Rating:      Summary: Feels cheap in my hand Comment: First off - I am a "swiss army knife" kind of guy (my wife refers to me as MacGyver), so I was happy to buy Victorinox kitchen knives. I have bought an 8" chef's knife (which I absolutely LOVE) and a 5" narrow boning knife (I'm also very pleased with that one). This knife, however, was not sharp when received, and the handle seems too narrow. It is not flimsy, but just feels like a "dollar store" knife. I gave it three stars because, once I sharpened this knife with 3-4 strokes on my steel, it cuts beautifully! It also seems to hold that edge quite well, but I can't get over the feeling that I am not using a quality knife just from the way it feels in my hand. I didn't pay much for it but I still probably wouldn't recommend it. I don't feel like I have good control over the knife because of the shape of the handle.
Customer Rating:      Summary: Good Little Paring Knife Comment: This is a very good little paring knife. Especially for the price. I don't use any of my other cheap paring knife's any more. I love this little thing. I does feel very light but it is built pretty sturdy and the blade is sharp. Not as sharp as I expected but you can sharpen it with a stone like another reviewer mentioned and because of the composition of the blade make it as sharp as you want. It's not shiny or flashy but it will get the job done and at the cost you really can't beat it for easy of use and utility. Don't bother with any cheap paring knife when you can buy this one for about the same price and get much better quality.
Customer Rating:      Summary: Sharp little knife for little hands Comment: This is a very sharp little knife for peeling and slicing vegetables -- I even managed to slice pieces of ham with it in a hurry for my lunch. However, if you have big hands like I do, this is not the perfect paring knife for you. The knife is light-weight and the handle is and much too small for my hands -- I prefer a paring knife with a thicker handle. For this reason, I give this knife four (4) stars.
Customer Rating:      Summary: Good, cheap knife! Comment: I, like so many others, read about this knife in "Cooks Illustrated". It is a good little knife, no doubt about it. I do find myself reaching for it a lot. It lost some sharpness pretty quickly but sharpened back up on a rod-style sharpener and I have an electric knife sharpener that will probably work fine when the time comes. If you don't have an inclination or ability to sharpen it, then you might be disapointed down the road.
The handle is a bit dinky and the whole knife feels a little cheap compared to some of my "nicer" knives but it is extremely maneuverable and quick. Perfect for slicing an apple or other fruit. It's a nice way to round out an order for free shipping!

I would definitely purchase this knife again. I have also bought the Victorinox chefs knife. It had a much sharper blade than the paring knife when new. I would highly recommend both these knives. Great knives with good prices.
