This Wusthof Ceramic 3 stage sharpening hone can easily bring those dull knives back to cutting form. The first stage is a course stage for cutting the new edge the next stage uses a fine ceramic to hone the knife to a keen edge. The 3rd stage allows you to sharpen your kitchen shears.

Customer Rating:      Summary: Easy peasey Comment: I ordered this Monday and received it Wednesday. Loved the packaging; though a plastic package, it wasn't heat-sealed in every conceivable manner so it was very easy to open.
That said, I have a small collection of Sabatier knives that I've simply used a steel on for the past few years. I know that the edges aren't what they should/could be so I bought this sharpener to see what it would do.
It's comfortable, easy to use, and effective. I first sharpened my 12" slicer, drawing it gently over the carbide side. I was surprised to FEEL the burrs on the blade!
I think that the key is to draw the blade from heel to tip slowly through the carbide sharpener with very slight pressure and repeating this until it feels smooth, no burrs. Then take it to the ceramic side for a final touch. That gave me a very nice edge.
Most likely I'll just draw my knives through the ceramic side from time to time unless I see a deterioration of the edge at which time I'll repeat the 2-step process.
I'm happy! A sharp blade is a safe blade!

Customer Rating:      Summary: Used for fine knives Comment: I purchased this to sharpen my good knives, purchased at "Sur la table." I'd had the knives for 2 years, they were not really sharp. One is a santuko design, with the wavy edge. Just a few passes thru the "coarse" side, followed by a few passes thru the "fine" side, and the knives are as good as new. Worked well on both straight edge and wavy edge knives. Good solution to sharpening without spending a lot of money.
I reserve this sharpener for my good knives, maybe I'll buy another for my cheap knives.

Well, this sharpener by the company that's famous for sharp knives, Wusthof, solves the problem for you with a few easy strokes. Never having mastered the art of using a sharpening steel no longer bothers me...this device is easy to use and very effective. The first stage, provided by two high carbon steel blades, sets the bevel. The second stage, two ceramic rods, hones the bevel perfectly and easily. The handle and legs of the device holds it firmly to the counter top during the process. I highly recommend it to anyone who can't seem to get a keen edge with a sharpening steel.
Customer Rating:      Summary: handy little sharpener Comment: So far, this product has performed as advertised. I have only used it a few times, but it sharpened our extremely dull 8" chef knife in just a few "swipes." It even removed the small "ding" in the middle of the blade. I can not vouch for it's longevity, but I am very happy with it's performance so far. One thing I did notice after thewas that there were a considerable number of tiny metal shavings, but I am assuimg that is proimarily because the knife had not been sharpened in several years. I ran it through the ceramic slot a few times, rinsed it in the sink & vwhalaa - razor sharp ! Also, I did not notice nedarly as many shavings with the other knives I sharpened.
Overall, I would definitely recommend this item - great buy for the money.
