Comment: I was hesitant to buy this item due to it's price but after comparing all the available models I could find, I picked the Wilton Cookie Pro Ultra II Cookie Press. I was worried it wouldn't live up to it's description but it worked like a dream. It was easy to take apart to wash and easy to put back together. My friend and i had heaps of fun making the recipe included. Just one batch made nearly 160 cookies, which was great for the party we were having. The press was easy to use. It was a bit messy to fill but i think that was us rather than the Press and we got better as time went on.
We loved it so much my friend bought one too, so that we each have one and can make them in half the time, when we are together. We are at the point where we are trying to think of excuses to make so many cookies. (we are going to try freezing half the dough for another day).
It was delivered quickly and arrived in pristine condition.

This is not an improvement.There are some things I that this product does well, so I'll start with them.
Grippy black silicone ring on bottom of press. Grips cookie sheet while you make the cookie. Helps with stability, and a very good idea.
Ratchet action: nice to use, and gives an even press for each cookie.
THAT SAID, This over all flimsy, the disks, plunger and rings top and bottom are going to crack. It has a small capacity, is a MAJOR pain to load with dough, and the shelf that holds the disks is too shallow. Also the included recipe calls for a greased cookie sheet. No, no, no. They'll never stick.
It is not an improvement over the old metal cookie presses, and I'm now shopping for a vintage type model.
Customer Rating:      Summary: Followed the Wilton Instruction video and it works perfectly! Comment: I need to premise my review with the fact that this is my first cookie press and I recently made my first ever batch of coconut spritz cookies. I did much research prior to purchasing the Wilton Pro Ultra II. I think many of the negative reviews on this cookie press are due to not following manufacture instructions. You should only use a spritz recipe and only at room temperature. With the dough at room temp, there is no way it could break the disks as several people have claimed. Also, Wilton recommends pressing the cookies directly onto a clean cookie sheet as parchment will lift with the press and if the sheet is greased the cookie will not stick at all.
I watched the video provided on Wilton's website prior to my purchase and just finished baking 6 dozen cookies without a hitch. I agree that a plastic cookie press is not as durable as a metal one. However, I decided on the Wilton because I read complaints of the weight of metal presses contributing to fatigue, aluminum components tainting the dough, and I didn't want to spend more than $30 for my first press. I want to add that I was able to press once for each cookie, not several times as other have had trouble with. Wilton explains in their video to expect a couple of "practice cookies" (i.e. first pancakes). From my research I have found this to be true with every cookie press.

Clear acrylic barrel makes it easy to see amount of dough left
Relatively low baker's fatigue due to repetitive use

No animal shapes (these would be good for Easter cookies)
Plastic is obviously not as durable as an all metal press, but the plastic on this press seems sturdy and I've no complaints about durability thus far
No way to set the depth of a press (there are some cookie presses that allow the baker to set the thickness of each click)
Bottom line, I love this cookie press! If you're not looking for a family heirloom or a gadget that will press shortbread dough, this one is worth a shot, particularly if it's your first press.
P.S. I recommend refrigerating your dough to assist with loading and then let the cookie press sit until the dough warms up to room temp for pressing.
