To keep the powder from hardening, I keep it away from the stove and any steaming pots, kettles and beverages. I use it in my (hot) tea and am very careful not to bring it in contact with the steam. When I am finished using it, I close it immediately and place it in a zip-lock bag.
If the beverage I am using the sweetener for is very hot, I found that the sweetener does not work very well and I have to use more powder. It sweetens best in cooler beverages.
In all, I prefer the packages (even though lately some of them were always hardened) because I can control the portions better.
I am slightly worried about the difficulty to buy this product lately and hope that it is still safe. What is the reason for its unavailability??
Customer Rating:      Summary: If it seems too good to be true... Comment: My momma told me to run the other way if something sounds to good to be true. Now that I'm grown up I choose to research everything. SomerSweet contains acesulfame, also called acesulfame 5. If you do not want chemicals in your body DO NOT USE THIS PRODUCT! You can buy it cheaper in regular stores as "Sunett" or "Sweet One". It is a chemical sweetener approved as safe by the FDA (who also approved aspartane, saccahrin - which we all know are TOTALLY safe!). SomerSweet is just a newer-improver version of other fake sugars -- next one coming out is Neotame. RESEARCH and find out for yourself.
